It means becoming an advocate, a translator, a source of calm during sensory storms—and still finding space to celebrate the small, powerful wins. It’s not always what the world pictures when they think of motherhood, but it’s full of love, growth, and deep connection.


The Story Behind Mother’s Day in the U.S.

Mother’s Day became an official U.S. holiday in 1914, thanks to Anna Jarvis, who was inspired by her own mother’s lifelong commitment to public health and caregiving. Ann Reeves Jarvis had organized women’s health clubs and cared for wounded soldiers during the Civil War.

Anna wanted Mother’s Day to be a personal, heartfelt celebration—a quiet day of reflection, handwritten notes, and gratitude. She never intended it to become commercialized, and later spent years fighting the growing industry around the holiday.

At its core, Mother’s Day is meant to honor nurturing in all its forms—from biological mothers to stepmothers, grandmothers, adoptive parents, and those who show up with love and care even without the title.

It’s high in protein, full of fiber-rich veggies, gluten-free, and gentle on blood sugar—great for anyone managing prediabetes or trying to avoid energy crashes.

🌿 Veggie-Packed Crustless Quiche

Serves: 6–8
Prep Time: 15 min | Cook Time: 35–40 min

Ingredients:

  • 8 large eggs
  • 1 cup unsweetened non-dairy milk (or low-fat milk of choice)
  • 1 cup baby spinach, chopped
  • 1 cup broccoli florets, lightly steamed and chopped
  • 1 bell pepper, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup shredded cheese (optional – cheddar, mozzarella, or feta)
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • Olive oil spray for greasing the pan

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Lightly spray a 9-inch pie dish or square baking pan with olive oil.
  3. In a large mixing bowl, whisk the eggs, milk, garlic powder, salt, and pepper.
  4. Stir in all chopped vegetables and cheese, if using.
  5. Pour the mixture into the prepared dish and smooth the top.
  6. Bake for 35–40 minutes, or until the center is set and the top is slightly golden.
  7. Let it cool for 5 minutes before slicing and serving.
